Crafted from 80% aged grape must and just 20% wine vinegar — with zero caramel, zero thickeners, zero additives — this is one of the densest, most complex IGP balsamics available in the U.S. market. Its naturally syrupy consistency comes exclusively from 15+ years of barrel aging in oak, chestnut, and cherry wood.
Produced by Acetaia Malpighi (est. 1850), a fifth-generation family acetaia in Modena, every drop traces back to estate-grown Trebbiano and Lambrusco grapes — from vineyard to must to barrel to bottle, entirely on the Malpighi estate.
